Hausbr\u00e4u-Wettbewerb zu fahren, aber wenigstens m\u00f6chte ich den Bericht von Ralf M\u00fcnch, einem deutschen Brauer, der in der Jury gesessen hat, hier zitieren:<\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#e1e1e1\">Vom 18. bis zum 20. Juni 2010 fand in \u017bywiec in S\u00fcdpolen zum achten Mal der nationale polnische Hausbrauerwettbewerb statt.<br><br>Zusammen mit den polnischen Braumeistern, Bier Enthusiasten und 2 legend\u00e4ren Bierverkostern aus England, hatte ich die gro\u00dfe Ehre als deutscher Braumeister die typisch deutschen Biere M\u00fcnchner Helles und Weizenbock zu beurteilen. Je ein Spezialist f\u00fcr die jeweilige Biersorte leitete so die Jury an und in lebhafter Diskussion wurde in mehreren Durchg\u00e4ngen der Sieger festgestellt. Ian Hornsey, Buchautor mehrerer B\u00fccher \u00fcber Bier, Wein und die Geschichte der Fermentation und sein Freund Bruce Awford sind ausgewiesene Spezialisten f\u00fcr Real Ales und Ian verliebte sich in die Sorte Baltic Porter. Bruce ist altgedienter Braumeister und immer noch als Cask Marque Acessor, eine Organisation, die die Englischen Pubs auszeichnet die die bestgezapften, gepflegtesten Biere ausschenken. Sowas sollten wir in Deutschland ruhig auch mal einf\u00fchren!<br><br>Hier die Beschreibung der Biere, die wir zu beurteilen hatten:<br><br>Baltic Porter:<br><br>A very strong, dark bottom fermentation beer, traditionally brewed in Baltic countries. Dark brown and red to almost black in colour. Rich maltiness is present in the aroma, often with a tinge of caramel, nuts or roasty aspects. Full and malty flavours are present, with very moderate hoppy aroma. Subtle bitterness from roasted malt is permissible. Fruit esters and alcohol can be felt on the aftertaste. They are generally pure with low or medium bitterness, both from hops and roasted grain. It is usually brewed with the use of Munich or Vienna malt, with added chocolate or caramel malts. It is permitted to use sugar.<br><br>Strong Scotch Ale (Wee-Heavy) &#8211; (17-25\u00b0Blg)<br><br>The strongest in the family of Scotch ales. Light copper to even dark brown in colour. Mainly malty and caramel in the aroma. Peaty and smoky aspects are often present. Stronger varieties permit the presence of fruity aspects &#8211; esters and alcohol. The flavour is dominated by what the malts bring in, also caramel and roasted. The ester note is associated with plum, dried fruit and raisins. Hop bitterness is barely discernible without the hoppy flavour. The full-bodied and sweet Wee-Heavy is a classical dessert beer. It is brewed with soft water and malts well modified with the infusion method. Some caramel malts and a bit of roasted barley are added. Some smoky malt may be used too. It is best to use English varieties of hops, up to the IBU 20-30 level.<br><br>Weizenbock &#8211; (16-18\u00b0Blg)<br><br>The wheat Weizenbock of Bavarian origin, dark amber to ruby brown in colour. Aroma is melanoidin, bread-like, typical of Bock, enriched with a touch of dark fruit, also vanilla, cloves and banana. The flavour is equally generous, sweetish, with an undertone of chocolate and cream. The tartness of wheat discernible only in the background if at all. Slight bitterness, like in other wheat beers. Brew Weizenbock using at least 50% of wheat malt, the rest is Munich or Vienna malt. Decoction brewing. Use German varieties of aroma hops, but only to obtain bitterness.<br><br>Milk Stout (11,5-14,5\u00b0Blg)<br><br>Deeply dark brown to black in colour, froth from beige to brown. A mild aroma of roasted grain, coffee, chocolate, often with an impression of creamy sweetness. The flavour is dominated by the elements brought in by malt and by coffee and chocolate notes from roasted grain. A generous amount of lactose makes Milk Stout sweet, which is a contrast to the roasted grain and hop bitterness (IBU 25 -35). Fruit esters are present in small quantities. Mouthfeel is full-bodied and creamy with low to medium carbonation. It is brewed with high-carbon water and pale ale malt, additionally with roasted barley and\/or colouring, chocolate, caramel malt and possibly with corn. Lactose, the milk sugar, is added to the brew.<br><br>Belgijskie Pale Ale (12-13\u00b0Blg)<br><br>The everyday beer in Brabant and Antwerp. Amber and copper in colour. Malts are present in the aroma, mainly: biscuit, toast, on the aftertaste fruit, hops, spicy aromas. Fruity flavours: orange, pear, moderately spicy; afterwards tastes of malt and a bit of fenol. Low to medium bitterness. Medium carbonation. Brewed with Pilsner malt and added Vienna or Munich malt. Fermented in temperatures below 20oC with top fermentation strains able to produce fenol compounds as a by-product in moderate quantities.<br><br>Monachijskie Jasne (11-12,5\u00b0Blg)<br><br>Yellow to light golden in colour with white froth, created in Munich in 1895 to compete with Pilsner beer. Aroma is the sweetness of Pilsner malt grain, slightly spicy with fine hop varieties, DMS may be present in the background. Mouthfeel built from malt. Only low to medium bitterness. No fruit esters or diacetyl. Medium bodiness and carbonation. The lager is brewed with Pilsner malt, Munich type water (bicarbonate) and German varieties of aroma hops.<br><br>Und hier die Ergebnisse:<br><br>Porter Ba\u0142tycki<br><br>1. Te wybory nasuwaj\u0105 my\u015bl, \u017ce zdaje si\u0119 istnie\u0107 jaka\u015b metafizyczna wi\u0119\u017a mi\u0119dzy piwowarem i jego udanym dzie\u0142em : ) Mam nadziej\u0119 weryfikowa\u0107 t\u0119 refleksj\u0119 w kolejnych edycjach konkursu.<br><br>Blisko 180 piw pochodz\u0105cych z blisko 80 browar\u00f3w domowych to sytuacja, kt\u00f3rej ju\u017c tylko z najwy\u017cszym trudem mo\u017cna \u2026<br><br>\u2026 by\u0142o sprosta\u0107 w dotychczasowej formule Konkursu. We wszystkich bez wyj\u0105tku kategoriach trzeba by\u0142o przeprowadzi\u0107 etap wst\u0119pnej eliminacji , przy czym w kategorii Monachijskie Jasne (M\u00fcnchener Helles) trzeba by\u0142o na tym etapie odrzuci\u0107 dwa piwa z ka\u017cdych trzech! Szcz\u0119\u015bliwie dla nas, t\u0119 odpowiedzialn\u0105 selekcj\u0119 wzi\u0105\u0142 g\u0142\u00f3wnie na swoje barki by\u0142y piwowar z monachijskiego Paulanera Ralf M\u00fcnch, s\u0105dz\u0105c po nazwisku stworzony do oceny M\u00fcnchenera. W tej najsilniej obsadzonej kategorii zwyci\u0119\u017cy\u0142 swoim piwem Czes\u0142aw Dzie\u0142ak. Czes\u0142aw w roku ubieg\u0142ym zwyci\u0119\u017cy\u0142 w kategorii Pilzner Bohemski, w\u00f3wczas r\u00f3wnie\u017c najliczniej obsadzonej, co chyba upowa\u017cnia do obwo\u0142ania go \u201ekr\u00f3lem jasnych lager\u00f3w domowych\u201d. W kategorii o proweniencji brytyjskiej Scotch Ale (Wee Heavy) szcz\u0119\u015bliwie ju\u017c w czwartek mogli na tym wst\u0119pnym etapie decydowa\u0107 Ian Hornsey i Bruce Awford. Byli tak surowi, \u017ce do pi\u0105tkowego fina\u0142u przepu\u015bcili jedynie 10 piw. A w finale najlepszym Wee Heavy okaza\u0142 si\u0119 produkt Jacka Michny z \u0141a\u0144cuta. Wymaga\u0142oby to standaryzacji organizacji i s\u0119dziowania w owych konkursach. Opracowanie takich standard\u00f3w i nast\u0119pnie ich wcielenie w \u017cycie wydaj\u0105 si\u0119 by\u0107 zadaniem wprost stworzonym dla Polskiego Stowarzyszenia Piwowar\u00f3w Domowych. W sytuacji, gdy Konkurs Piw Domowych sta\u0142 si\u0119 bodaj g\u0142\u00f3wnym wydarzeniem Festiwalu Birofili\u00f3w w \u017bywcu, przyj\u0119cie dobrych rozwi\u0105za\u0144 organizacyjnych bezpiecznie zwi\u0119kszaj\u0105cych \u201epojemno\u015b\u0107\u201d konkursu staje si\u0119 piln\u0105 konieczno\u015bci\u0105. Jeste\u015bmy to winni dziesi\u0105tkom piwowar\u00f3w, kt\u00f3rzy nadsy\u0142aj\u0105 swoje piwa z nadziej\u0105 na rzeteln\u0105 ocen\u0119 i sukces.
